Strawberry Beet Popsicles

STRAWBERRY BEET POPSICLES

INGREDIENTS

2 medium beets 

2 cups strawberries, washed and destemmed 

⅔ cup coconut milk 

3 Tablespoons maple syrup from Horner’s Corner 

½ teaspoon vanilla extract

Juice of ½ lemon, about 2 Tablespoons 

Additional supplies: blender, popsicle molds, popsicle sticks

INSTRUCTIONS

  1. Remove the tops and roots of the beets and scrub them well. If beets have thick skin (typically larger beets), peel them using a vegetable peeler. Cut the beets into 1 ½ inch chunks and roast in oven at 400 degrees for 30-40 minutes, or until easily pierced with a fork. 

  2. Place the cooked beets and all other ingredients into a blender and blend until smooth. Pour mixture into popsicles molds and insert popsicle sticks. Place in the freezer for approximately 3 hours or until frozen.
