Apple Brandy Créme Anglaise

Ingredients
1 cup heavy cream
2 large egg yolks
1/4 cup sugar
2 Tbsp apple brandy
Instructions
Whisk together cream, egg yolks, and sugar in a medium saucepan, cooking over medium heat. Whisk constantly about 8-10 minutes until mixture has started to thicken but before it starts to boil.
Pour through a fine mesh strainer into a glass bowl. Stir in brandy.
Place bowl in ice and stir frequently tor the next 30 minutes. Cover and chill until use.
