My Mom's Buttermilk Chocolate Cake

This cake and the two icing recipes from my Mom, stir up memories of chocolate and love.
Ingredients
2 cups sugar'
1/4 lb butter ( 1 stick)
1 tsp vanilla extract
3 eggs, separated
3 squares (3 oz.) unsweetened chocolate
1/2 cup hot water (approximately)
2 cups sifted cake flour
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk
Instructions
Preheat oven to 350°/ Use a 9x9 baking pan
Cream sugar and soft butter. Add vanilla. Melt Chocolate, add hot water to melted chocolate to make 3/4 liquid. Let cool and mix into the butter and sugar. Beat egg yolks a bit and add to mixture. Sift flour, salt, and baking soda. Add flour mixture alternately with the buttermilk to the batter. Beat egg whites until stiff and fold into the batter. Pour into a 9 x 9 greased pan. Bake about 50 minutes or until a tester (toothpick), comes out clean. Let cool and frost with either of the two frostings below.
