Avocados: Recipes, Health Benefits and Seasonal Favorites

I grew up in South Texas, and usually our avocados came from Mexico. They were plentiful and a great source of healthy fat. Now they are touted as a Super Food. But when you're a kid the most important thing was taste. So my favorite was and still is, a plate of homemade corn tortillas stuffed with beef fajitas, avocados or guacamole, pico de gallo (hot sauce) and all the other trimmings.
So here are a few ways to enjoy avocados before they are a bit out of season, in some climates.
