Taquitos Recipe

Taquitos can truly become anything you want them to be.

I used eggs, bratwurst, avocado and white corn tortillas. Corn tortillas have fewer carbohydrates than flour tortillas, so for me that is a better choice. So let's get to it. 

Keep the bratwurst ready to go and only use half. Cutting the pieces straight into the pan makes that process super easy.

Cut however much you want, but this enables you to just use half and it keeps in the zip lock for several days. 

Drop in a saute pan as you cut them. Cook thoroughly, then add your eggs. I cooked one egg and split between the 2 tortillas.

Once the eggs and brats are cooked, you can add mushrooms, cheese or anything else that sounds good to you.

I like starting the day with 1/2 an avocado. I find that it keeps me from getting hungry too soon.

Here is my tip for avocados. I only use half; I cut them into smaller pieces inside the skin. Then spoon out and put on top of your eggs and brats. Top with Salsa and you have a great breakfast of champions. 

One Last Tip...
Cut the avocado in half around the seed. Removing the seed is as easy as taking a sharp knife, popping the seed with the knife then give it a twist. The seed comes right out of one side. Leave the seed in the other side and sprinkle with a dash of lemon or lime and it will keep for one day.
