Watermelon Balsamic Chicken Salad

Ingredients

  • 1 cup balsamic vinegar

  • 2 cups cubed grilled chicken breast

  • 4 cups spinach or greens

  • 2 cups cubed watermelon

  • 1/2 cup blue cheese or feta crumbles

  • 1/4 cup sliced almonds

  • Extra virgin olive oil for drizzling

Instructions

  1. Make the balsamic reduction:  Pour the balsamic vinegar into a small saucepan and bring to a boil. Reduce heat and simmer for 15-20 minutes until the balsamic vinegar is significantly reduced and starting to become syrupy.

  2. Layer the remaining ingredients in a bowl or platter.  Drizzle with balsamic reduction and olive oil.  Serve immediately.
