Chile Lime Grilled Watermelon

Ingredients

  • Watermelon

  • Olive oil

  • Chili powder

  • 1 tsp. lime zest

  • 2 tsp. lime juice

  • 1/3 cup fresh cilantro leaves

  • 1/4 cup red onion

Instructions

  1. Preheat a grill and drizzle thick wedges of watermelon with a olive oil or canola oil.

  2. Once the grill is very hot, add the watermelon slices and grill until until grill marks are formed, about 3 minutes per side.

  3. Top with 1 tsp. lime zest, 2 tsp. fresh lime juice, 1/3 cup fresh cilantro leaves and 1/4 cup thinly sliced red onion.
