Pulled Pork Sandwiches

Ingredients

3 pounds boneless pork shoulder

1 Tbsp parsley

2 tsp cumin

2 tsp garlic powder

2 tsp onion powder

2 tsp salt

2 tsp smoked paprika

½ cup beer (sub: gluten-free beer, or dry cider)

Package of Planet Princess Food Buns (plain)

Pickled red onions and/or dill pickle slices

Instructions

Add the pork shoulder to a large slow cooker (or smoker if you have one)

Slow Cooker Instructions:

  1. In a small bowl, stir together the parsley, cumin, garlic powder, onion powder, salt, and paprika. Rub mixture into the pork being sure to coat all sides.

  2. Pour the beer into the bottom of the slow cooker.

  3. Cover slow cooker and cook on low for 8 hours or high for 4 hours. Pork is ready when it easily shreds with a fork.

  4. Shred the pork and stir the meat into the juices in the bottom of the slow cooker.

  5. Serve immediately or keep warm in the slow cooker until ready to eat.

Smoker:

  1. In a small bowl, stir together the parsley, cumin, garlic powder, onion powder, salt, and paprika. Rub mixture into the pork being sure to coat all sides.

  2. Place in smoker at 250 degrees (for approx. 60-90 minutes/pound)

  3. Mop with beer or cider every 45-60 minutes to add flavor and moisture

  4. Shred and serve immediately once cooked

For serving: Place shredded pork on toasted or grilled Planet Princess Food bun.  Could drizzle with Primal Kitchen Keto BBQ sauce and top with pickle slices or pickled red onions
