D'Amico & Sons Green Goddess Salad Dressing

Ingredients
1 large shallot , minced
2 cloves garlic , minced
2 Tbsp Champagne vinegar
1 Tbsp lemon juice
1 avocado, well mashed
3 Tbsp capers, minced
4 anchovy filets, pureed or minced
1/2 cup heavy cream
1/4 cup Italian parsley, chopped fine
3 Tbsp basil, chopped fine
2 Tbsp green onion, finely chopped
1/2 cup canola oil
1/4 cup virgin olive oil
Instructions
- Add all ingredients except the oils to blender and puree with the motor running, add oils in a steady stream until emulsified
Cook’s Note
- This recipe may be used as a dip or a great salad dressing over your favorite greens, chopped celery and add a few fresh tomatoes from your garden or from your local farmers markets or grocery stores.
