Caramel Popcorn

The next recipe is one I crave in the fall; especially when I think of homemade Halloween popcorn balls! I played with "The Almond Eaters" recipe by blogger Erin.
 
Ingredients
½ cup maple syrup
⅓ cup coconut cream
2 Tbsp coconut oil
1 tsp vanilla extract
1 Tbsp butter
1 Tbsp coconut sugar (you can use regular granulated sugar)
¼ tsp salt
4 to 6 cups of popped popcorn

Instructions
 

  1. For the caramel sauce: add all ingredients into a saucepan and bring to a boil; once boiling, Once the caramel is done simmering, stir consistently for 5 additional minutes, allowing caramel to thicken. Pour caramel into a jar or cup and set aside.
  2. Put popcorn in a large bowl and pour caramel sauce over top and stir everything together with a large spoon or spatula.
  3. Either A) eat immediately or B) allow time for the caramel to cool and harden. Enjoy!
