Apple Pie Popcorn
by Kimberley Thompson, Tastemaker in Residence
The following recipe is one I adapted from "Sweet as a Cookie" by Karissa Krishart for a tasty sweet popcorn treat when I am craving comfort pastries. (Yes, that is "a thing.")
Ingredients
4 to 6 cups already popped popcorn
2 Tbsp coconut oil
2 Tbsp butter
1/4 tsp vanilla
2 Tbsp sugar
1 tsp apple pie spice seasoning
1/2 tsp cinnamon
Instructions
- In a microwave safe (I use my Pyrex cup glass pitcher), put in the coconut oil, butter, and sugar. Heat in 30-second increments until melted; about 2 or 3 cycles. Watch to make certain it does not boil over. Remove from microwave and CAREFULLY stir in the vanilla, apple pie spice and cinnamon. Microwave 30 more seconds; again watching carefully.
- Put your popcorn in a large bowl and evenly pour over the flavoring. I do it in 2 steps; stopping and stirring between. Scrape out your mixture and use the scraper to stir the popcorn for 4 or 5 swipes.
Eat and enjoy!
