Peppermint Meringues

Ingredients
4 egg whites
¼ tsp. salt
¼ tsp. cream of tartar
1 tsp. vanilla extract
1 tsp. mint extract
1 ½ cups white sugar
Candy canes (crushed) 

Instructions

  1. Preheat oven to 300 degrees
  2. Line baking sheet with parchment paper
  3. In a large bowl, beat egg whites, vanilla extract, peppermint extract, salt, and cream of tartar until the mixture begins to firm, then begin to slowly add the sugar
  4. Once your mixture has formed soft peaks, slowly fold in candy canes
  5. With a tablespoon, carefully dollop the uncooked meringues onto the baking sheet lined with parchment paper. 
  6. Bake for 25 minutes
