Peppermint Meringues

Ingredients
4 egg whites
¼ tsp. salt
¼ tsp. cream of tartar
1 tsp. vanilla extract
1 tsp. mint extract
1 ½ cups white sugar
Candy canes (crushed)
Instructions
- Preheat oven to 300 degrees
- Line baking sheet with parchment paper
- In a large bowl, beat egg whites, vanilla extract, peppermint extract, salt, and cream of tartar until the mixture begins to firm, then begin to slowly add the sugar
- Once your mixture has formed soft peaks, slowly fold in candy canes
- With a tablespoon, carefully dollop the uncooked meringues onto the baking sheet lined with parchment paper.
- Bake for 25 minutes
