Gluten- Free Oatmeal Apple Cookies

Ingredients
1 apple chopped into small cubes
5 pitted dates, soaked in water overnight
1 egg
1 cup of gluten free oats (I like Bob’s Red Mill)
1 teaspoon cinnamon or pumpkin pie spice
1 teaspoon baking powder
Dash of salt

Instructions

  1. Preheat oven to 350 degrees.   
  2. In your food processor or mixer, mix together all the ingredients.   
  3. Use a small scoop and make 1 inch balls and place on cookie sheet (use parchment paper or cooking spray on sheet).  Press down the balls with a fork.   
  4. Bake the cookies for 15-20 minutes, or until the outsides get slightly crisp. Cool and Enjoy!
