Rhubarb Dream Dessert

Ingredients -Crust

1 cup flour
5 Tbsp powdered sugar
1/2 cup butter

Instructions

  1. Blend together the 3 ingredients. Press mixture into a greased 8 X 11 pan. Bake at 350○ for 12 minutes.

Ingredients - Topping

3 beaten eggs
1 and 3/4 cups white sugar
1/4 cup flour
1/4 tsp salt
1 tsp vanilla
3 cups Rhubarb 

Instructions

  1. Mix together the first 5 ingredients. Stir in 3 cups finely chopped fresh rhubarb into the egg mixture.
  2. Spoon onto the hot crust and spread evenly. Bake at 350○ until custard sets; about 1 hour.
  3. Watch closely. (Grandma's note on the "watch closely." Doesn't say why.)
