Pumpkin Spice Pancakes

When we think of fall, the first thing that comes to mind is pumpkin. From pumpkin spice lattes to pumpkin patches, autumn seems to be made up of all things pumpkin. Try our Pumpkin Soup for Lunch or Pumpkin Pine Nut Salad with Shrimp for Dinner. Pumpkin doesn’t have to be saved for pie on Thanksgiving, it can be incorporated into any autumn meal!

Ingredients
1 ¼ cups whole-wheat flour
2 tsp baking powder
½ tsp nutmeg
½ tsp vanilla
1 tsp cinnamon
1 cup skim milk
1/3 cup pumpkin puree
1 egg
1 Tbsp coconut oil
1 Tbsp sugar 

Instructions

  1. Whisk flour, baking powder, cinnamon, and nutmeg in a bowl
  2. In a separate bowl, whisk milk, pumpkin, vanilla, coconut oil and egg 
  3. Mix wet ingredients into dry ingredients 
  4. Cook in a greased skillet over medium heat
  5. Mix together a small amount of cinnamon and sugar and top pancakes with this mixture
