Pumpkin Pine Nut Salad with Shrimp

Ingredients
3 cups pumpkin, cubed
2 Tbsp olive oil
1 tsp salt
1 cup pine nuts
1 cup feta cheese
2 cups shrimp
3 Tbsp balsamic vinegar
½ cup honey
1 tsp pepper
Instructions
- Mix pumpkin in bowl with olive oil, pepper, and salt
- Place pumpkin on parchment paper-lined baking trays and bake for 20 minutes, then flip and bake for 20 more minutes
- Brown pine nuts in a pan
- Cook shrimp over medium heat
- After pumpkin cools, mix together pumpkin, shrimp, pine nuts and feta
- Drizzle honey and balsamic over the mixture
- Top with fresh herbs
