Grilled Salmon with Sweet Onion Relish

Ingredients

4 Salmon Steaks

2 Large Sweet Onions, Walla Walla or Vidalia

1/4 cup Olive Oil

1 Tbsp Sugar

1 Bay Leaf

1 Sprig Fresh Thyme

1 Tbsp Balsamic Vinegar

Instructions

  1. Grill Salmon 12 to 15 minutes, depending on thickness

  2. Saute onions in olive oil until transparent

  3. Add sugar & herbs

  4. Cook until mixtures is caramelized and reduces

  5. Add vinegar to taste

  6. Serve sauce over grilled salmon steaks

Cook’s Note - To remove fish and onion odors from hands, wash hands in salted water or rub with a piece of lemon dipped in salt
