Grilled Salmon with Sweet Onion Relish

Ingredients
4 Salmon Steaks
2 Large Sweet Onions, Walla Walla or Vidalia
1/4 cup Olive Oil
1 Tbsp Sugar
1 Bay Leaf
1 Sprig Fresh Thyme
1 Tbsp Balsamic Vinegar
Instructions
Grill Salmon 12 to 15 minutes, depending on thickness
Saute onions in olive oil until transparent
Add sugar & herbs
Cook until mixtures is caramelized and reduces
Add vinegar to taste
Serve sauce over grilled salmon steaks
Cook’s Note - To remove fish and onion odors from hands, wash hands in salted water or rub with a piece of lemon dipped in salt
