Roasted Roma Tomatoes

Vicki’s Roasted Roma Tomatoes are sure to be an Oscar Party hit; not to mention they make your home smell like Italy!

Ingredients

1/4 cup extra virgin olive oil

1 Tbsp. fresh thyme leaves

2 garlic cloves, minced

1/4 tsp. Kosher salt

10 Roma tomatoes, cut in half lengthwise


Instructions

  1. Preheat oven to 275.

  2. In medium bowl, stir together olive oil, thyme, garlic and salt.

  3. Toss tomatoes in mixture until well coated.

  4. Place tomato halves cut side up on baking sheet.

  5. Spoon over remaining oil mixture, if any.

  6. Roast for 2.5 hours, depending on size of tomatoes.

  7. Remove from oven and cool completely.

Cook’s Notes

  1. Roasting tomatoes brings out the most flavor when they are not in season.

  2. Serving ideas: Bruschetta, pizza topping, or a side dish for steak (finish with Parmesan the last 10 minutes of roasting).
