Outbreaks of influenza and nagging colds started early this season and according the Centers for Disease Control are currently at high rates in most states. What’s one way we can minimize risk and help us get feeling better quicker? Good nutrition of course! Joining us this morning is registered dietitian and nutrition consultant Christina Meyer-Jax who is ready to arm us with some recipes to help our immune systems have a fighting chance!

Fight off the flu and colds with the power of purple and gold! This Minnesota Viking inspired beverage can help you give your immune system a fighting chance!

Makes: 3-4 smoothies (cut recipe down if you want less servings)

Ingredients
For the Orange Layer
1 small persimmon or orange, cut into quarters
1 cup frozen mango
1 lime, juice only
1 Tbsp nut butter of choice
½ tsp turmeric powder
A pinch cayenne pepper
1 cup coconut milk

For the Purple Layer

Ingredients
1 small beet root, peeled and cut into small cubes
1 cup blackberries frozen
1 small pink grapefruit, peeled and cut into quarters
¼ cup fresh pomegranate juice
½ cup water
5-6 fresh mint leaves
*Optional 1 tsp organic raw honey
To garnish: chia seeds, unsweetened coconut flakes, mint leaves

Instructions

  1. Add all the orange layer ingredients into the blender and process to obtain a smooth liquid.
  2. Pour evenly into the serving glasses.
  3. Add all the purple layer ingredients into the blender and process to obtain a puree.
  4. Pour on top of the orange layer.
  5. Garnish with chia seeds, coconut flakes and mint leaves, and serve.

Cook's Note -*It will make about 2 cups smoothie per person.
