Cucumber Agua Fresca

This recipe came from our friend Joan Olson of Prairie Drifter Farm. She adapted it from the Simply Recipes website. It tastes like a cucumber lime-aid. Use this recipe as a guide, adding more or less of the ingredients depending on your preferences. If you don’t like the peels, peel it before blending.
Ingredients
2 cucumbers, ends trimmed but with peel still on - coarsely chopped
1/4-1/2 cup fresh lime juice
4-5 sprigs mint leaves (about a large handful) woody stems removed
1/4-1/2 cup sugar
*Approx. 1-1/4 cup of water
Instructions
- Add all ingredients to blender or food processor. Blend until smooth. Strain through a colander or sieve, unless you would more of the solids. Add juice to a pitcher filled halfway with ice. Serve with mint leaves and slices of lime.
