Sweet Potato Almond Coconut Casserole

Leftover Sweet Potatoes? Here's your healthy and tasty answer to a Sweet....casserole!

Ingredients
2 ½ lbs sweet potatoes, mashed
¾ cup coconut milk
2 tsp lime juice
1 bag Almond Coconut WholeMe clusters
Optional: Marshmallows, toasted almond slivers, shredded coconut flakes
 
Instructions

  1. Preheat oven to 375 degrees
  2. Process sweet potatoes, coconut milk and lime juice until combined
  3. Transfer the sweet potato mixture into a casserole dish, top with full bag of Almond Coconut WholeMe and any optional ingredients listed
  4. Bake until golden, or around 15-20 minutes.
