One-Dish Spring Salmon

Not everyone is a fan of ham, so a great additional entrée during spring gatherings is a one dish wonder with the nutrition superstar…salmon! ou honestly can sub out any veggies with ones you prefer more, but here are my favorites
Ingredients
2-6 salmon filets (depends on the size of your crowd)
2 Tbsp of infused olive oil (I like Milanese Gremolata) but any flavor you like if great
Few splashes of Oregano White Balsamic Vinegar or fresh lemon juice
1-2 tsp Herb de Province seasoning mix
½ can S&W cannellini beans
Veggies of choice
I put in the baking dish: olives, sweet potatoes, broccolini, cherry tomatoes, chives, brussel sprouts
Instructions
- Place salmon filets in baking dish. Sprinkle olive oil, vinegar, and herbs over the top.
- Place veggies mixtures in open space around salmon filets in baking dish
- Bake covered at 375 degrees for 10 minutes. Then remove cover and bake until brown, yet tender (about another 5-8 minutes)
