Sweet and Sriracha Slow Cooker Chicken

Cook's Note - Double or triple ingredients below as needed for larger meal prep
Ingredients
5 chicken breasts (preferably No Antibiotic Ever varieties) about 4 oz. each
1 cup low sodium broth
½ cup tamari
½ cup honey
½ cup sriracha
2 Tbsp minced garlic
Instructions
- Place 5 chicken breasts on the bottom of a slow cooker with 2 tablespoons of minced garlic.
- Set crock-pot to high heat and cook for 2.5-3 hours, or until the chicken is fully cooked and easily shredded.
- Drain liquid from cooked chicken. Then, shred chicken with 2 forks.
- Make sauce by mixing together tamari, honey, and sriracha. Pour on top of shredded chicken and mix.
- Pack meal prep containers with chicken, whole grain of choice (brown rice, quinoa, etc) and steamed veggies such as: broccoli, spinach, carrots, green onions.
Cook’s Note - Top with fermented cabbage or other veggies.
