Baked Halibut Stuffed with Crab, Apple and Brie

Ingredients

Serves 4

4- 8 oz. Halibut fillets
6 1/2 oz. Crab meat
6 oz. Brie (best if it’s a brie that doesn’t melt quite as easily)
3 Tbsp Mayo
1/2 cup diced apple
3 shallots, chopped
3 Tbsp chopped Italian parsley

Instructions

  1. Cut pocket in halibut fillets. Set aside. In a small bowl combine remaining ingredients. 
  2. Stuff fillets with crab/brie mixture. Brush both sides of halibut fillets with olive oil. Season with salt and pepper.
  3. Bake 10 minutes per inch of thickness.
