Orange-Apricot Muffins

Ingredients
Muffins
2 cups flour
1 tsp baking soda
1 1/2 cups sugar
2 eggs
1 cup sour milk or buttermilk
1/2 cup butter, melted
1/2 cup grated orange rind
1/2 cup chopped dried apricots
1 cup chopped pecans
Glaze
1 Tbsp sugar
juice of 2 medium oranges
Instructions
- To prepare muffins: Preheat oven to 375°.
- In a large mixing bowl, sift together flour, soda and sugar. Stir in eggs, milk and butter (do not beat). Add rind, fruit and nuts.
- Spoon 1 Tbsp batter into greased small muffin tins. Bake 15 minutes.
- Meanwhile, prepare glaze by combining juice and sugar. Immediately pour 1 tsp glaze over each hot muffin.
- Serve warm. Makes 5 dozen.
