Pumpkin Pine Nut Salad with Shrimp

Ingredients
3 cups pumpkin, cubed
2 Tbsp olive oil
1 tsp salt
1 cup pine nuts
1 cup feta cheese
2 cups shrimp
3 Tbsp balsamic vinegar
½ cup honey
1 tsp pepper 

Instructions

  1. Mix pumpkin in bowl with olive oil, pepper, and salt 
  2. Place pumpkin on parchment paper-lined baking trays and bake for 20 minutes, then flip and bake for 20 more minutes
  3. Brown pine nuts in a pan 
  4. Cook shrimp over medium heat 
  5. After pumpkin cools, mix together pumpkin, shrimp, pine nuts and feta
  6. Drizzle honey and balsamic over the mixture
  7. Top with fresh herbs
