Popcorn Crunch & Munch Mix

Ingredients
6-7 cups popped popcorn
1 cup dry roasted salted peanuts
1/3 cup roasted salted pumpkin seeds
1/2 cup brown sugar, firmly packed
1/4 cup butter
2 Tbsp honey
1/4 tsp salt
1/4 tsp baking soda
1/2 cup craisins
1/2 cup chopped dried apricots
Instructions
- Preheat oven to 300°
- Spray no-stick cooking spray on 18 X 13 rimmed baking sheet
- Mix popcorn, peanuts, and pumpkin seeds in non-plastic bowl
- Bring sugar, butter, honey and salt to boil over medium high heat
- Remove from heat when reaching 248 degrees, watch closely!
- Stir in baking soda, whisk well
- Pour over popcorn mixture, stirring until mixed
- Pour mixture into rimmed baking sheet
- Bake about 20 minutes, stirring once.
- Remove from oven and stir in craisins and apricots
- Cool and store in air-tight container

This is a very versatile recipe and substitute to taste or ingredients on hand.
