HOLIDAY GRANITAS MAKE CRANBERRIES SHINE!

Homemade Cranberry Sauce:

1 bag fresh cranberries

½ cup orange juice (or apple cider)

5 peeled and chopped Clementine oranges

1 tsp pumpkin pie spice 

1/8 cup sugar (you can add more or less depending on how sweet you prefer your sauce)

¼ tsp vanilla

Directions:

Throw all ingredients in a saucepan. Heat on medium-high until boiling. Cook and stir until cranberries have popped. Turn down heat and stir around until a gel-like consistency. Pour into a shallow glass container to cool (refrigerate).

Now to make the Granitas…

  1. Mix chilled cranberry sauce with good quality vodka. I enjoy Prairie Organic. Add enough vodka so it has good flavor and is a somewhat thick, soup-like consistency. If it’s too thin, it will not freeze properly.
  2. Put cranberry vodka mixture in the freezer for at least 24 hours.
  3. Take out container and use a strong fork to scrape frozen cranberry mixture into ice shavings. Scoop ice shavings into some fun cocktail glasses and garnish with a mint spring!
