Mimi's Go To Power Balls

My weekdays tend to be very busy—running from meetings to class, to work, etc. Generally, I am able to manage a hectic schedule well. Unless I am hungry. When I am hungry, I am not necessarily the nicest person you will meet. So, I make sure that I bring snacks wherever I go so that people don’t have to encounter Mimi’s counterpart: “Meanie.” Some of my go-to snacks are “power balls.” They are nutritious, filling balls of goodness that keep me full as I rush from one place to the next. Here are a few of my favorites!
