1st Year Anniversary Celebration
by Rebecca Matheson Ortiz, Tastemaker in Residence
I cannot believe that an entire year has passed since the best day ever. Sometimes it feels like it was just yesterday, and other times it feels like it’s been 10 years since that lovely day. As we rounded this corner it was fun to look back through pictures and remember what a great celebration it was. To be honest, we think our wedding was the best. And I don’t even just think that’s because it was our wedding, I think it was super awesome and if someone else had it, it still would have been the best. We had food trucks (a taco truck and a grilled cheese truck) cater dinner, which was a trendy and delicious hit that also saved us money; we had a delicious naked cake layered with raspberry lemon, cherry and cream cheese and strawberry and chocolate ganache; and we had a beautiful day that felt like a true fairy tale.
I had everything planned for my ceremony and reception to be outdoors, however, since rain was expected we moved the reception inside. I can’t say I’m not still bummed--it didn’t even rain—but I know many of our guests were appreciative of the air conditioning. It was such a blast dancing the night away with our closest friends and family.
To celebrate our first anniversary, we ventured back to San Antonio, where we tied the knot, for a long weekend on the Riverwalk. We stayed at one of the original Riverwalk hotels, El Tropicano, and were able to make quick walks along the waterway to the Alamo and downtown attractions. We stopped in at Rita’s for guacamole made tableside on our first afternoon and had pizza delivered to our hotel that evening. Turns out we’re a lazy bunch.
The next day we were hit with thunderstorms, so our plans for Six Flags Fiesta Texas were foiled, but we enjoyed a fabulous brunch at Magnolia Pancake Haus (try the bananas foster pancakes!) before visiting my aunt and uncle and we wrapped up the day with a showing of Disney’s The Jungle Book where we sipped on Icees and snacked on popcorn.
The day of our actual anniversary we headed home to finally dig into that top tier of our wedding cake, which wasn’t too bad, and just enjoy the life we’ve built together over the past year. It’s been a wild and wonderful ride so far, and I’m looking forward to see what the next year brings our way.
