Healthy Eating - Healthy Living

One cold night in ApriI, I watched the master chef at work. Yeah I know cold and April shouldn't go hand in hand, but when we finished 9 courses that took us from breakfast to dinner, I was warm and satisfied, but not stuffed. Yes, the portions were perfect but it's more about the foods she chose to mix and the building block ingredients we actually savored, as much as tasted.
Brenda's team included Henry Emmons and Carolyn Denton, as well as her Spoonriver Restaurant cast of chefs. Dr. Emmons is a psychiatrist who integrates mind-body and natural therapies, including mindfulness of what we are eating, into his work. Carolyn Denton is a licensed nutritionist. Her work focuses on nutrition for general health and disease prevention.
I know what you're thinking, really, can this food be delicious? The answer is, we tasted every course and it was over the top spectacular. This week we will focus on the egg scramble, Soba noodles, and the steamed fish, which in this case was Halibut. Spend some time with the cook's notes. I tried to glean every morsel of wisdom from Brenda. I still have much to learn, but it's a start.
In the next few weeks we will highlight the rest of the menu. And yes, this southern girl was over the moon when I saw Tapioca on the list; you'll have to wait, I did.
