Joy of Spring & Turnip Risotto

Sunshine, grass, puddles and mud afoot on the farm makes us think Spring and crave the first sprigs of asparagus that will pop from the garden in a few more weeks and we dream of the first bite of spicy radish. Eli is running everywhere on the farm searching for the first worm, Adam is taking his electric tractors out for a spin to check his tune-ups, and I'm furiously finalizing my production plans for the season. The saying goes that we vegetable farmers think hard in the winter so we don't have to think in the summer. My pages of spreadsheets will tell me what to plant, when, where, and how much. This week marks the start of our meticulous planting plans, and we will seed hakurei salad turnips and red and golden beets in the hoop houses this week. All thoughts are of GROWTH, EMERGENCE, and the JOY of SPRING!
