Chocolate Fruit Balls Recipe

Ingredients

1/3 cup fresh dates (about 5, or 2 1/2 oz.), halved and pitted
1/3 cup fresh figs (about 4, or 2 1/2 oz.), stemmed
1/3 cup fresh plums (about 3 or 3 oz.), halved and pitted
3/4 cup walnuts, divided
1/2 cup seedless raisins
1/4 tsp fresh lemon juice (about 1 wedge)
7 oz. dark chocolate


Instructions

  1. Line 2 medium baking sheets (10 x 15) with wax paper.
  2. Add dates, figs, plums, 1/2 cup walnuts, raisins and lemon juice to a food processor; pulse until fruit and nuts are finely diced. 
  3. Form into 1  1/4" balls and place on wax paper. Dry for 1  1/2 hours, or until balls hold their shape when gently lifted. 
  4. Finely chop remaining walnuts and set aside. In a double boiler over low heat, melt chocolate (or use a chocolate melter, like Wilton’s Chocolate Pro Electric Melting Pot available at amazon.com). Dip each ball in melted chocolate, place on wax paper, and sprinkle with chopped walnuts. Dry until set ( about 1 hour).To store, arrange balls in single layers between sheets of wax paper in an airtight container. Keep refrigerated.
