Popcorn Crunch & Munch Mix

Ingredients

6-7 cups popped popcorn
1 cup dry roasted salted peanuts
1/3 cup roasted salted pumpkin seeds
1/2 cup brown sugar, firmly packed
1/4 cup butter
2 Tbsp honey
1/4 tsp salt
1/4 tsp baking soda
1/2 cup craisins
1/2 cup chopped dried apricots

Instructions

  1. Preheat oven to 300°
  2. Spray no-stick cooking spray on 18 X 13 rimmed baking sheet
  3. Mix popcorn, peanuts, and pumpkin seeds in non-plastic bowl
  4. Bring sugar, butter, honey and salt to boil over medium high heat 
  5. Remove from heat when reaching 248 degrees, watch closely!
  6. Stir in baking soda, whisk well
  7. Pour over popcorn mixture, stirring until mixed
  8. Pour mixture into rimmed baking sheet
  9. Bake about 20 minutes, stirring once.
  10. Remove from oven and stir in craisins and apricots
  11. Cool and store in air-tight container

This is a very versatile recipe and substitute to taste or ingredients on hand.
